About the job

We are seeking an experienced cook or trained kitchen craftsman for a permanent full-time position in the madhouse (production and teaching kitchen at Peder Lykke School).

Peder Lykke School is a municipal public school on Amager. The school has undergone a complete renovation over the last few years. In connection with the renovation, the school built a very nice madhus (food house), and the doors opened in August 2019.

In the kitchen we produce food with children and for children. The focus in everyday life is therefore equally on production and teaching/handling of students. We do not require a pedagogical educational background, but you must be able to work with children, and you should preferably thrive having children around you. Our goal is not to make 'children’s food', but to prepare tasty meals that can inspire and nourish children.

Guiding principles such as taste, health, variety, nutrition, culinary courage, learning and inspiration are words we work with on a daily basis. We cook as much as possible from scratch and with the greatest possible respect for sustainability principles. We have the organic gold badge and only responsibly caught fish. Further down in this posting there is additional information about Copenhagen’s madhouses (madskoler) and the concept behind it.

We offer

You will join a small, spacious and skilled team. Our kitchen coordinator handles the daily management with a team structure, where you have the opportunity to leave your own mark.

We offer the opportunity to be part of a community, professional sparring and close collaboration with competent colleagues. You will be part of one of a total of 21 madhouses in the City of Copenhagen and part of a concept that is thriving and has political support. When 2026 ends, there will be 24 in total. We also offer a kitchen with a good atmosphere, rhythm and tone.

We warmly welcome you and will provide a proper introduction to the workplace and your new team.

Your duties will be

  • handling of raw materials, including repackaging, self-inspection, temperature measurement
  • cooking in both the hot and cold kitchen and occasionally producing desserts
  • baking (we produce bread in many forms)
  • plating the food
  • clearing up and cleaning, as we maintain a very high standard and ensure the kitchen meets this
  • meal plans, where you will be part of planning menus.

Qualifications

Apply for this position if you

  • are a skilled cook or hold a bachelor’s degree in nutrition and health and can present an apprenticeship certificate (or equivalent international documentation)
  • if you are unskilled, but have plenty of experience from similar positions
  • you speak and understand Danish
  • consider cleaning and self-inspection to be a natural part of the kitchen trade and place high importance on it
  • can keep a cool head and remain composed when it is busy around you
  • practices good manners and tone in your working life
  • is punctual and can arrive on time – also in the morning
  • feels responsible and is not afraid of challenges
  • is dedicated to your trade and wishes to produce tasty, inviting, inspiring and varied food
  • has a good understanding of health and nutrition, and is curious to learn more
  • enjoys working with children.

Special qualifications

We are particularly interested in you if you can also nod yes to the following

  • has experience with bread and baking for large-scale production
  • has experience with large kitchen machines (steam kettles, rotisseries, industrial ovens, vegetable peelers/slicers, etc.)
  • can perform at a high tempo in production
  • in addition to the chef trade has some pedagogical/teaching experience
  • has experience with 'world cuisines' and finds it exciting, i.e. ingredients, flavors and combinations from different parts of the world
  • even though it is early in the morning, I can still send my colleagues a smile.

What is a madhus in the City of Copenhagen?

A madhus is a public school where food, food education and health are central, integrated parts of the school’s everyday life. At madhus there are optimal opportunities for culinary exploration and for the formation of new food culture. The purpose of madhus is to create variation and diversity in school meals.

The madhus should not be confused with the subject Home Economics, but is a kind of 'mini internship' where students across several grade levels try to be part of the everyday life and production in the kitchen. There is not a fixed concept for madhus, and each madhus has its own expression and content. However, it is a fixed part of all madhus that students participate in the production.

In the following links we present and comment on the concept in different ways: https://vbn.aau.dk/files/250804659/Madskole_rapport_AAU_2016.pdf and http://www.klfnet.dk/aktuelt/nyhed/artikel/alle-skoler-skal-vaere-madskoler/ .

Employment terms

The working hours are from 07:00 to 15:00, Monday to Friday (weekly 39.7 hours according to local agreement). There may occasionally be a need for afternoon or evening work for larger events or meetings at the school, but never on a regular basis. Salary is according to the local agreement between 3F and the Children and Youth Administration in the City of Copenhagen, and holidays are determined by the school’s annual calendar.

Pension scheme is also mandatory and according to current rules in the Children and Youth Administration. In connection with the employment, we will obtain a criminal and child protection certificate and take references.
